Happy #MeatlessMonday! This salad is perfect for that! It is a complete meal, you won’t miss the meat at all, I promise you. It has a little Mexican flare going on with the beans, the corn, the bell pepper, the tomatoes and the spicy scotch bonnet pepper for some heat then I topped it off with feta cheese and dried cranberries for some sweet and tangy flavour and poured Trujuice sorrel vinaigrette with chia seeds all over that and knocked my taste buds all out the park!
You definitely want to use more dark leafy greens for this. All I had on hand was iceberg at the time from my friend Carl’s farm. Though you know how much I’m not a fan of iceberg, this was so fresh and crisp and sweet and perfect! There’s nothing like a salad straight out the ground.
I had company over who absolutely devoured the salad and didn’t miss the meat at all. The beans, cheese and chia seeds help to keep you fuller for longer as well and the sorrel vinaigrette added that sweet yet tangy bite with the ginger from the juice and the apple cider vinegar mixed in. You have to make this salad!
Irie’s Black Bean, Corn and Feta Salad with Trujuice Sorrel Vinaigrette
2 cups mixed salad greens
1 salad tomato, diced
1 red bell pepper, julienne
1 red scotch bonnet pepper
1 can black beans
half cup sweet corn
handful of dried cranberries
handful of feta cheese
3 tablespoons Trujuice Sorrel with Ginger Juice
1 tablespoon extra virgin olive oil
1 tablespoon organic apple cider vinegar
1 tablespoon chia seeds
salt and pepper to taste
